干锅粉丝虾 | Dry Pot Shrimp with Starch Noodles
干锅,又称麻辣香锅,是四川江湖菜的代表菜品之一,以味道浓烈著称。干锅顾名思义就是做出来的菜品比较干爽而不是汤汤水水的,菜品中的食材一般都比较入味,吃的时候无须蘸取酱汁或汤料来加重味道。干锅的食材选择基本上和火锅差不多,只要能吃的,基本上都可以用来做干锅,比如干锅鸡,干锅肥肠,干锅排骨,干锅藕片,干锅鸭舌等。今天的菜谱是结合虾与粉丝,在配上包菜和洋葱等蔬菜,使用圣厨宝麻辣香锅调味料,做一道色香味美的干锅粉丝虾。这道菜的特点是把粉丝吸油入味的特点来弥补虾不易入味的不足。另外,这道菜用黄油增加香味,厚味十足。
主料:大虾
配料:龙口粉丝、包菜、 洋葱、
调料:圣厨宝麻辣香锅酱、黄油、干辣椒段、生粉、食用油、蠔油、姜、蒜丝、青花椒油、食盐、米酒
制作流程:
1、包菜切丝、洋葱切丝备用;
2、将大虾去壳,开背去虾线,冲洗,加食盐、米酒、生粉码味;
3、锅加油低温爆熟,捞出沥油备用;
4、热水泡龙口粉丝,待软后捞出沥水, 然后加入蠔油、包菜丝搅拌均匀;
5、将黄油洋葱丝放入干锅垫底备用;
6、锅烧油放姜蒜丝大火炒香,然后加入干辣椒爆炒出香后,放包菜粉丝和圣厨宝干锅酱汁用大火翻炒均匀
7、下油爆大虾继续翻炒调味,混合均匀后装入干锅仔,至于黄油洋葱丝上。

酸辣煎银鳕鱼 | Hot and Sour Fried Fish with Veggies
银鳕鱼,又称裸盖鱼,以下抄袭自中文维基“(学名:Anoplopoma fimbria)又名裸头鱼,是輻鰭鱼纲鮋形目黑鮋亞目裸盖鱼亞目黑鮋科的其中一种,经常被与真正的鳕鱼混为一谈。本鱼分布於北太平洋,包括日本北部、勘察加半岛的白令海海岸、阿拉斯加、加利福利亚等海域。一般栖于近底层(水深0-2740米),属冷水性底栖鱼类。”

主料:银鳕鱼
配料:新鲜大虾仁、青豆、胡萝卜、鸡蛋液、西兰花、韭苔
调料:圣厨宝酸辣粉酱汁、米酒、食盐、黄油、洋葱酱、食用油
烹制流程:
1、洋葱切碎加盐做酱,将银鳕鱼装入容器加米酒、食盐、洋葱酱码味备用;
2、胡萝卜切丁,韭苔切段备用;
3、鲜大虾仁背开边去虾线,用水洗后放入蛋液、青豆、胡萝卜丁、韭菜苔段,加盐混合均匀;
4、锅加油,小火炒蛋液混合虾仁及青豆、胡萝卜丁,待出香后捞出,沥油装入盘器一端;
5、锅烧水氽煮西兰花,捞出沥水后也放入装虾仁鸡蛋盘器;
6、锅加入黄油,文火煎码味后的鳕鱼块,二面都成金黄色后捞出,放在盘器中间,再淋入圣厨宝酸辣粉酱汁。
诀窍:
1、一定使用黄油来煎鱼块,会有特别的香味;
2、炒虾仁一定不能过火,颜色变红即刻起锅,否则虾肉太老;
